Came home from errands and decided to keep dinner light and playful. This quick stir-fry came together with okra, tofu, and leek gently cooked in garlic olive oil — mushrooms were meant to join, but I simply forgot them. Funny how the simplest dishes still bring quiet joy.

Recipe: Garlic Olive Oil Okra Tofu with Leek

Ingredients
- 200g okra, trimmed and sliced
- 300g firm tofu, cubed
- ½ leek, sliced into rings
- 2 cloves garlic, minced
- 2 tbsp garlic olive oil (or olive oil + extra garlic)
- 1½ tbsp soy sauce
- Salt, to taste
- Optional: chili or black pepper
Instructions
- Heat garlic olive oil in a pan over medium. Pan-fry tofu cubes until lightly golden. Set aside.
- In the same pan, sauté garlic and sliced leek until fragrant.
- Add okra with a pinch of salt. Stir-fry 2–3 minutes until bright green and tender-crisp.
- Return tofu to the pan. Drizzle in soy sauce. Toss gently for another minute to coat.
- Adjust seasoning. Crack black pepper or add chili if desired.
